We have had a company up here for the last 3 years at our annual city bash sell "Nitro Ice Cream". They freeze the ice cream so quickly that you can't imagine how smooth the texture is.
It's fun to watch them handing out sample cups and watching people get 20 feet away while eating the sample, stop and them turnaround and come back to buy a larger cup. It's that great, that smooth.

I would be interested in the economics of buying liquid nitrogen and selling ice cream made with it. Is the added smoothness worth it ?

Possible oil contamination of the liquid nitrogen.
I have a concern if the liquid nitrogen comes directly in contact with the ice cream. Liquid nitrogen is formed by pumping the nitrogen gas up to a high pressure then releasing the pressure which cools the nitrogen, eventually liquifying it. The pumps frequently use an oil in the pumps and some of that oil can get incorporated into the nitrogen. There would be ways to avoid the oil contamination and I would hope that such ways would be used.
