Scientists make a healthy airline meal

Airline food just got healthier.

A team of scientists at Leatherhead Food Research in the U.K. whipped up a healthy airline meal that meets all 222 health claims approved by the EU.

The meal, which is designed for long haul flights, consists of salmon terrine, chicken casserole with lentils and vegetables, a mixed salad with olive oil dressing and a multi-grain roll. Passengers have their choice of water or juice as a beverage and the meal comes with a dessert that’s a yogurt-based blancmange with walnuts and a sugar-free caramel sauce.

The idea came about when Leatherback Food Research’s CEO Paul Berryman challenged his employees to make a meal that included all 222 health claims recently finalized by the European Food Safety Authority.

“I thought of the airline meal concept when flying back from Vitafoods in Geneva. I had spent three days talking about health claims and at a round table event I suggested that Leatherhead could make a product with all 222 claims, no problem! It wasn’t that simple, but we did it within one week!” Berryman said in a statement.
